Danielle made her annual batch of nettle soup yesterday. You can only make it with fresh young nettles so it is just an April / May thing. Here is the recipe
Nettle SoupBag full of young nettles
2 onions
4 carrots
2 potatoes
Veg stock
salt and pepper
barley (optional)
>
wash nettles
peel and dice onions, carrots and potatoes
boil veg in stock, simmer for 25min
Remove from heat and add nettles
Cool and blend
